Paleo Carrot/Apple Breakfast Bread or Snack Cake



We all know that starting our day with a healthy breakfast is the key to good health and creating a wonderful day!

When I first started learning about the Paleo Lifestyle, I thought having a bowl of oatmeal everyday was healthy... now I know better! And I really missed having a good cup of coffee and a scone or coffee cake on the weekends. (I love to have eggs and bacon breakfasts for dinner!)

Then I discovered a site, which this recipe is adapted and now I really love using this recipe base for Banana Bread and Pumpkin Bread.

The whole family will enjoy this Paleo Carrot/Apple Breakfast Bread…



Paleo Carrot/Apple Breakfast Bread

1 cup blanched Almond Meal
3 T. Coconut Oil
¼ teaspoon Himalayan Salt
½ teaspoon Baking Soda
1 teaspoon Cinnamon
1 teaspoon Nutmeg 
½ teaspoon Ginger
½ teaspoon Cloves
2 T. Honey or Coconut Palm Sugar (17 vs. 3 grams of carbs per Tablespoon)
3 Eggs
2 Carrots, grated
1 Apple, grated

In a large bowl beat eggs and then mix in Coconut Oil and honey OR Coconut Palm Sugar. Add salt, baking soda and spices, and almond flour or meal and mix until well combined.


Please note: If you use a loaf pan that's bigger than the size recommended above, your loaf of bread will not "rise," it will be wide and short. Adapted from elana’s pantry.


Grate the apple and mix in completely, then add the grated carrots.

Spread batter into a petite loaf pan (I like using a glass pie pan).
Bake at 350° for 25-35 minutes
Cool and Serve!
