Paleo Coconut Almond/Pecan Granola



We all know that starting our day with a healthy breakfast is the key to good health and creating a wonderful day!

When I first started learning about the Paleo Lifestyle, I read from several sites that you can just eat leftover dinner for breakfast, which is fine sometimes. But having granola and yogurt to me is the freaking best!

The whole family will enjoy our favorite granola…



Paleo Coconut Almond/Pecan Granola

3 Tablespoons Coconut Oil
3 Tablespoons Honey or Coconut Palm Sugar (I like Thai Taste the best and has the fewest carbs of all sweeteners)
1 Tablespoon Vanilla extract
2 Tablespoons Flax meal
1/4 teaspoon Cinnamon
1/8 teaspoon Nutmeg
2 cups Coconut flakes (unsweetened)
1 cup Almonds, chopped or sliced
1/2 cup Pecans OR * 1 cup Walnuts, chopped

Preheat oven to 300 degrees.

In a dutch oven, heat Coconut Oil on low to liquefy and take off heat. Add Honey (or Coconut Palm Sugar or combination of both to equal 3 Tablespoons), Vanilla, Flax meal, Cinnamon, and Nutmeg, stirring until combined.

Stir in Coconut flakes, chopped or sliced Almonds, and chopped Pecans until well coated. Spread evenly on large cookie sheet.

Bake for 6 minutes, take out and stir, spread evenly again and cook for about 6 minutes more. (o) Keep an eye on it because it can go from toasty brown to black quickly!

Enjoy as a snack or we love this granola sprinkled on plain / greek yogurt for breakfast!

*If you prefer Paleo Coconut Almond/Walnut Granola, substitute 1 cup Walnuts for the Pecans.
